Ten Things I Did Over the Weekend!
Did you have a good Memorial Day weekend?
It started raining a bit around 4:00 this morning. It’s fresh and damp and cool outside. My front door is open and all the lovely outdoor sounds are drifting in the screen.
I pulled my Hatteras sweatshirt on this morning and it feels cuddly.
Back to the weekend!

1. Food Fixing. I fixed freezer food over the weekend! I’d gathered groceries on Thursday to make several recipes. We have quite a few eggs right now from doing our neighbor’s chores while they were gone, so I’ve been making egg casseroles. I made a breakfast casserole that used hard-boiled eggs. It’s tucked in the freezer. I tried this Breakfast Enchilada Bake and we loved it! I used corn tortillas and Ultra Gel in place of the flour to make it gluten-free. I also did a new beef and cheese enchilada recipe. Haven’t tried it yet. I whipped up Monster Cookies. I would always have these cookie balls in the freezer, if it was as easy as typing it. And I made these Frozen Fruit Cups. Harvest approaches! The wheat is changing rapidly.
2. I hugged my daughter good-bye as she headed off on a trip to visit friends and family in Indiana and Ohio. She was excited! I’m so happy for her that she could go.
3. I took a walk. A lovely walk.
4. I read, relaxed, took a nap, watched a movie, hung out with my man and my son…
5. I edited a bunch of pictures.
6. I did some knitting and chatted with a friend for a bit.
7. We had our brothers over and grilled chicken and made rice and guacamole and deviled eggs. {All the eggs to use!}
8. I tried making Gluten Free Blueberry Rolls. They were delicious! Recipe to post.
9. I made some more strawberry jam.
10. I wished my sister and baby niece Happy Birthday across the miles! Matthew’s youngest brother’s second baby was born on my sister’s birthday! It makes it nice and easy to remember.
There’s my ten….plus a bunch of everyday stuff I didn’t even mention.
Some things I didn’t do, but would have been glad to! 🙂 Handlettering…trying some more pretty pies…making a cake…several blogpost ideas…more reading…more knitting…
