Last week I posted pictures of Triple Berry Pie.
Today, let’s try STRawBeRRy!!
A couple of weeks ago, I had strawberries to use and I was still thinking about pretty pies and I began to pull out ingredients to put together strawberry pie.
A few months ago we found out my farmer man has Celiac disease. On the one hand, NOT REALLY NEWS we wanted to hear. On the other hand, we DO want him to feel better.
I love to bake. I wouldn’t want to do it all the time, every day, but I have my times that I am just ReaDy to bake and it is a happy place for me.
SO. GLUTEN FREE. Not my cup of tea….or slice of bread.
BUT, nothing else to do. I dug in and began to learn about new ingredients and search for recipes. I was amazed and filled with gratitude at the way God poured out on my baker’s heart through other people. I had friends who had friends who cooked/baked gluten-free. I found out about some acquaintances who were gluten-free. I met some new people soon after the diagnosis and, lo and behold, they had gluten-free kitchens.Β Friends, and friends of friends,Β sent me recipes and texts and restaurant tips and Pinterest board suggestions.
I went from feeling overwhelmed to feeling blessed. We had kind words shared with us. We had friends withΒ sympathetic hearts who groaned with us. We had many people who showered us with care. I had friendsΒ who told me to ask them questions anytime. We had friends who gave us gluten-free baked goods to try.
Just like with my sciatic, when a situation becomes part of your life, you connect with other who’ve been through it and so many people are more than happy to share and teach and hand you a map for this new-to-you-unchartered territory!
AND. It could be such a worse, worse thing! We are grateful for the love of friends and caring people and the grace lavished on us from God.

THIS Strawberry Pie was made with a gluten-free pie crust.
My Triple Berry Pie was made with my normal favorite pie crust recipe.
For this one I used a gluten-free pie crust mix from Bob’s Red Mill.
It was easy to mix up because a MIX and all.
It was tasty and HOORAY, I was able to make shapes!!!
I really, really love these little flowers. This set is very similar to the cutters I have. I think this set of flowers looks fun try.

Over the weekend I tried another pie recipe and I tried a newΒ pie crust recipe and adapted it so it would be gluten-free. I’ll post pictures and recipe later. Β It was yummy!
I haven’t decided of I like making the pies and playing with pie dough and shapes better or if I like taking the pictures better!
Or perhaps, I like both better! π

I have some gluten free cakes cooling right now, waiting for my attention. We had the yummiest frosting at a friend’s recently and I’ve been itching to try it out ever since!
And we woke up to glorious, cozy rain and gray skies and it’s a wonderful day for the oven to hum!

Now take the sugar out of the filling and yay! I can eat it! It looks so good!
Just replace the sugar with THM Gentle blend and if there is jello in the mix use sugar free and you have a winner mom!
I just made one today with the Gentle Sweet, but normal Jello because it’s only a couple of tablespoons. We haven’t even eaten it yet. We’ll see! π
Fresh strawberry pie is one of the prettiest pies, I think!
Deborah, the little flowers are oh-so adorable. I’ve need to get some new, assorted cutters. I’m seeing those pies we love all over Instagram too.

I want to keep playing with pie……….but I have other things that need done and other projects I WANT to do, too! π I do really love the idea of building up a stockpile of shapes in the freezer for a quick put-together.

I love your attitude! So many people have realized that gluten isn’t working for them or they have Celiac disease. Thank goodness there are so many gluten free products and smart people now who have figured out how to make things manageable and delicious. π
