I came across a good deal on strawberries, so I snagged several and made some strawberry jam and strawberry pie this week! I thought strawberry pie would make a good addition to the recipes I’ve shared.
Ingredients
- 1 cup sugar
- 3 T. cornstarch
- pinch of salt
- 1 cup boiling water
- 2 T. butter
- 3 T. dry strawberry jello
- 1 quart well drained strawberries, chopped
- 1 baked pie shell
Instructions
In a saucepan, combine sugar and cornstarch and salt. Add boiling water. Bring to a boil over medium-high heat, stirring constantly. Boil for 2 minutes.
Remove from stove and add butter and jello.
Cool slightly.
Fold in strawberries and transfer to baked pie shell. Cover with saran wrap, smoothing saran wrap onto the top of the pie. Refrigerate several hours.
Cut into pieces, serve with Cool Whip or whipped cream, and savor!

It doesn’t take long to make one, if I have pie crusts in the freezer, ready to go! It doesn’t take long for a pie to disappear either. I rather enjoy making pies, but they don’t go very far for the prep time that they do require!
