We’ve been stuck on these yummy fruit and yogurt parfaits recently.
They’re pretty easy to make. There’s a couple of steps to it, particularly if you make your own granola, but it’s all pretty easy!
I usually have small styrofoam cups with lids around for frozen fruit cups or leftover homemade ice cream. I’ve been using them for these parfaits now too. It takes a little extra prep, but it is so nice to have single servings easily accessible and ready to grab. They’re nice for packing lunches or taking a snack to the field or any other grab-and-go situation!
These parfaits are easily customizable! I love berries, but Matthew isn’t so fond of them. Peach is his fruit of choice. We’ve been making Peach Parfaits and Mixed Berry Parfaits and Raspberry Parfaits and Blueberry Parfaits. You can totally use whatever fruit makes your tastebuds smile! I mark the lids with a complex system, so we know which kind is which. I’ll even share my system with you.

Ingredients
- Yogurt:
- 64 ounces Greek Yogurt
- 2 pkg (1.7 oz) sugar-free instant vanilla pudding, dry
- 16 ounces Cool Whip
- Granola:
- 8 cups oatmeal (gluten free if needed)
- 1 1/2 -2 cups Pecans, chopped
- 2/3 cup brown sugar
- 2/3 cup flaxmeal
- 1/2 tsp salt
- 2 tsp cinnamon
- 2/3 cup butter melted
- 1/2 cup honey
- 2 T. sugar
- 8 tsp vanilla
Instructions
To assemble parfaits:
Place a spoonful of granola in the bottom of styrofoam cup.
Scoop yogurt mixture on next. (A cookie scoop is awesome for this.)
Sprinkle fruit on top.
Add another spoonful of granola.
Top cups with lids and freeze.
You could also layer this in a 9x13 glass dish and freeze, if you'd like.
Notes
We like to put the parfaits in the refrigerator overnight and let them thaw and eat them for breakfast in the morning.
This sounds so good. I think I can easily turn it into sugar free. 😉
