Let’s think about favorite summertime food fixin’ today!

Some of our summertime faves are chicken on the grill, sweet corn and fresh fruit.
We like blueberries {some of us} and fresh peaches. It’s not summertime without a watermelon or two and a juicy cantaloupe. Matthew and I are opposites in the melon department. He loves cantaloupes and could pass on the watermelon. I love watermelon and will happily let him have the cantaloupe! I think cantaloupe are so beautiful, but they don’t taste that way to my taste buds. {And it’s so disappointing to have watermelon and cantaloupe mixed together in the same bowl, because it all tastes like the cantaloupe!!!} 🙂
As an aside…………do you like to put salt on your melon? I don’t really, but my farmer man does and my Dad always did.
I like to make Taco Salad in the summer and Chicken Mozzarella Salad. I have a simple recipe for Chicken Nachos that I make year round, but it’s a quick and easy meal for summertime.
I’ve been doing a mix of chopped meats and veggies and seasonings and grilling them and we think it is delicious! Example: Potatoes, Onions, Yellow and Orange Pepper, a couple of jalapenos or five, zucchini, mushrooms and some type of meat. Chicken chunks. Pork. Link Sausage sliced. Steak pieces. Any combination, really!! Season with seasoned salt or a favorite seasoning blend. I had a blend my sister had given me that we really liked and I also use Freddy’s seasoning sometimes. I precook the potatoes or use canned, otherwise it would take them a long time to get tender.
We don’t necessarily eat all the veggies, but the meat and potatoes disappear and we love the flavor it gives by cooking it all together. {We’re rather meat-and-potato-ey around here!!! Good ole staples.}
I have a summertime recommendation for you if you live close to an Andy’s Frozen Custard. I love red raspberry and they have a red raspberry concrete. So good! My friend, Delaney, and I are hoping to go get another one before summertime leaves us!
Cold meat sandwiches are another summertime staple. I’ve been making myself BLT’s. I’m the only one of us four who likes a true BLT. The others end up with combinations like BLC and BTC. {Bacon, Lettuce, Cheese or Bacon, Turkey, Cheese} {Notice the BACON}

We can eat these Chocolate Chip Cookie Cupcakes all year long. Mmmm!!! Wish I had one right now.
