I’m working on updating the look around here…we’ll see what happens and if I end up with what I want or if I decide to try something else or if I just go back to what I had!
There are several things I really like about this new theme, but there are features that my old theme offered that this one doesn’t. And as always when I go to messing with the techie side of things~I know just enough to frustrate myself. Not quite enough to do it all quickly and easily, yet just enough to try to work at it myself. But, I DO know more about the behind-the-scenes of a blog than I did two years ago. I really love learning computer stuff, but it takes TiMe and MeNTaL eFFoRT!!!
I’m posting a recipe for Zucchini Pie which has absolutely nothing to do with updating a blog look or with computer tech. That’s just the way things happen around here most of the time. This and that and the other!
So if you still have zucchini lurking in your garden or getting dropped off in your yard during the night, this is your recipe!
It is yummy! It’s like a cream pie and it’s easy. I have a recipe for cream pie over here. Β I think my recipe for this came from my dear aunt’s sweet sister. My aunt passed away from cancer over ten years ago. I still miss her and can’t believe it’s been that long.
Ingredients
- 1 heaping cup of peeled zucchini
- {Cook and drain zucchini}
- 1 cup sugar
- 1 egg
- 2 T. flour
- 1 can evaporated milk {or 1 cup}
- 1 1/2 T. butter
- 1 tsp. vanilla
- 1/8 tsp. salt
- 1 unbaked pie shell
Instructions
Place cooked zucchini in blender. Blend for a little.
Add in the rest of ingredients, except, of course, the unbaked pie shell.
Mix all together until smooth and well blended.
Pour into pie shell.
Sprinkle with cinnamon and/or nutmeg. However much or little you want. I just dust it on until it looks pretty well covered.
Bake at 425 degrees for 10 minutes.
Turn oven down to 300 degrees and bake for an additional 15-20 minutes or until set.
Enjoy the creamy, cinnamony aroma!
Cool and refrigerate.
Serve and enjoy.
If you like warm cream pie, you can enjoy a nice slice before you do the whole cooling and refrigerating thing!
