Here is a very simple and tasty recipe that my family likes! It is a wonderful way to use up leftover tortillas or tortillas that are drying out. It is roughly adapted from this recipe. I printed the recipe out, but I’ve never made the original! I eliminated the green peppers and went with hamburger and refried beans because that’s what I had in my pantry, plus my family is not crazy about green pepper. We have fairly plain {and sometimes picky} tastebuds around here. 🙂 My family liked it, so I’ve stuck with it. I do think the chicken and black beans sound good, so we’ll see if I ever try it. I like how easy this recipe is!
Ingredients
- 1 pound hamburger
- Minced onion
- 1 can refried beans
- 1/4 tsp. red pepper flakes
- 1/4 tsp. chili powder
- 1/4 tsp. garlic powder
- 1 cup shredded cheese, divided
- 3 whole flour tortillas
Instructions
Brown hamburger and minced onion.
Stir in refried beans, seasonings, and 1/2 cup cheese.
Combine and heat.
Meanwhile, in a non-stick skillet, lightly crisp the tortillas on each side.
Spray a pie plate with nonstick cooking spray.
Layer first tortilla on the bottom of the pie plate.
Top with half of the hamburger mixture.
Layer second tortilla on top.
Top with the rest of the hamburger mixture.
Layer third tortilla on top.
Top with the remaining cheese.
Bake at 350 for 20 minutes.
Notes
You can serve salsa and sour cream for topping if you desire!

This looks yummy! My kids, unfortunately,are still pretty much against any thing combined. They like their meat and veggies separate. But, I am slowly adding more casseroles into the mix and this sure looks like a good one to try!
My kids prefer meat and potatoes too, but they will eat more casseroles than they used too.
I don’t mind fixing meat and side dishes, but casseroles can often be easier to do ahead and not as much last minute prep.
