I made these hand pies back in the early summer.
There are so many fun pie ideas! I’ve seen so many pretty pie pictures. There are regular pie-shaped pies and there are slab pies {I have one I tried in this post} and foldover pies {that I’d like to try} and pie tarts and handpies, to name a few!
I kept seeing the handpies and I wanted to make some.
I had some rhubarb, so when I saw this recipe for Rhubarb Cream Cheese Hand Pies over at Eats Well With Others, I printed it out. {And isn’t that such a fantastic blog name?!} 🙂
It was fun to make them.
I made my pie dough gluten free {because celiac} and I made my filling strawberry-rhubarb instead of plain rhubarb. I used lemon juice in the cream cheese mixture, but omitted the lemon zest because I didn’t have it.
I used 12 ounces of strawberries and 4 ounces of rhubarb.
I always think it is a little tricky to know how much filling to put in each individual treat when making a recipe like this.
I wished I would have filled my pies a little fuller than I did.
HOWEVER, if you LOVE pie crust, they would have been perfect for you.
I like my pie to lean towards the filling side with less crust. 🙂
I love making the pretty pies that I’ve been trying this year, but it does make a lot of crust when it comes to eating it.
I’m looking forward to pulling out pie stuff again this fall. SO MANY ideas I want to try! {And too many things that MUST be done, besides books to read and other projects, oh my} I have a blog friend on IG who make gorgeous cakes and food and she often sends me pics of pretty pies she finds online and it makes me want to go BREAK OUT ALL THE PIE STUFF.
I did have pie crusts in the freezer and baked peanut butter pie for my niece’s birthday when my sister and family were here in August. I don’t have a lot of pictures of the peanut butter pies, but took some with my phone and perhaps they will be my post for next Monday or the next!
