How about some more comfort food? Cold weather, casseroles and cozy kitchen with the oven on!
When I want something fairly quick to fix {who am I kidding? Isn’t that always what I’m after?} and something we all like, if I think about it, I will make this Mac and Cheese Casserole. It is my mom’s mac and cheese recipe and then I just add browned hamburger to it. Yummy!
Ingredients
- 1 stick butter
- 2 T. flour
- 1 1/2 cups milk
- 1 tsp. salt
- 16 ounces of Velveeta cheese, cubed
- 2 cups macaroni, uncooked
- 1 pound hamburger
Instructions
Brown hamburger.
Boil a pan of water and add dry macaroni. Boil for approx. 7 minutes or until pasta is tender.
Remove from burner and drain. Return macaroni to pan.
In another pan melt butter and stir in flour till thickened.
Add milk, salt, Velveeta Cheese and flour mixture to drained macaroni. Return to burner and heat till combined and cheese is melted, stirring constantly.
Add browned hamburger.
Pour into a greased 9x13 and bake at 350 for 30-45 minutes.
It's also yummy to top with buttered cracker crumbs!
*If you just want mac and cheese, omit the hamburger.
*You can also use 3 cups of macaroni

Looks delicious! I have tried and tried to boot Velveeta out of my life but there just is no substitute when you want good old fashioned mac & cheese (or broccoli cheese soup).

There just isn’t a substitute for Velveeta sometimes! I so agree! 🙂 I’ve told my husband that sometimes I think it was easier and more fun before we were bombarded by what’s bad for you and what’s good and this is terrible and don’t feed your family this!!! 😉
