There is something about a beautiful cake that just makes me smile.
I love Lisa’s cakes and pictures and ALL HER FOOD over at Celebrate Creativity. Trust me. You want to take a few minutes to go gaze. Here’s her Sweet Category. Check out her beautiful cakes.
I had read her tips about icing a cake in this post.
Then I had this delicious cake with thick fudgy frosting at a friends’.
Plus, I’m trying out cake strips, if you remember. {Chit-chat about them in this Gluten Free Chocolate Chip Cake post.}

Suffice it to say, I had several reasons I wanted to make a cake!
#1 ~ I wanted to try a gluten-free one so my man could try out the fudgy frosting.
#2 ~ Still very much in the learning stage and trying out gluten-free baked goods recipes.
#3 ~ Cake strips to use.
#4 ~ icing tips and tricks to try!
#5 ~ and the fudgy frosting! it’s worth mentioning more than once.
And there’s always the added benefit of a pretty cake!
And pulling out one of my pretty cake stands.
They are one of my favorite things.
I googled some recipes.
I mixed and stirred.
I baked and cooled.
I frosted.
I took some pictures.
I snipped some roses and made the cake beautiful.
And took some more pictures!

One of Lisa’s suggestions for frosting the sides of the cake was to use a frosting bag and tip and pipe the frosting onto the cake. Then spread it out.
By piping it you get a thicker and more consistent covering.
I tried this out and really liked the method.
Freeze your cake layers. This was another tip I’d recently read in a couple of places and also in Lisa’s post. It helps cut down on cake crumbs and getting crumbs caught in your frosting.
{Freeze them before you do any frosting at all. 😉 }
I did this with the cakes for my kiddos’ birthdays.
It really makes a difference.
It just means thinking ahead a little more and allowing a little more time. Worth it!
I made a chocolate cake and a white cake layer.
I really liked the chocolate recipe.
The white one I wasn’t as crazy about.
The recipe for the chocolate cake is over here at Hershey’s Kitchens. I used my gluten-free flour mixture that’s posted in this pie crust recipe and I used coconut oil instead of vegetable oil.
Here’s the recipe for the Fudgy Frosting that my friend shared with me. It’s very similar to the frosting recipe that you will find with the chocolate cake recipe. My friend had a friend who shared it with her and I believe it originated from a Hershey cocoa box.
I have a recipe for a chocolate frosting that you cook. This frosting reminds me of it, but it’s simpler and faster.

Ingredients
- 1 stick butter
- 2/3 cup cocoa powder
- 4 cups powdered sugar
- 1/3 cup milk
- 1 tsp. vanilla
Instructions
Melt butter and stir in the cocoa powder.
Slowly beat in powdered sugar and milk.
Stir in vanilla.
Beat several minutes until fluffy.
Frost cake and enjoy!
