THE CAKE CATEGORY was feeling a little left out or neglected or some such thing. You know ~ with all the pies that have been hanging around here.
A friend told me she had tried Betty Crocker’s Gluten Free Cake Mix and it was simple and yummy. It made me think of this favorite cake recipe. A friend shared it with me several years ago. It is TaSTy!!!
SO, IDEA!! I found the gluten free mix at our local Wal-Mart and it was sitting in my cupboard. I wanted to whip up this cake and make it gluten free so my man could eat it and enjoy it.
I also had EvenBake Cake Strips I wanted to try out. I was quite excited about this discovery. A friend and neighbor told my daughter about them. They are the bomb!! You soak them in water and then wrap them around your cake pan and THE CAKES BAKE EVENLY.

Revolutionary, my dear Watson! I had never heard of them before, but as soon as I did I was sold. I WANTED TO TRY THEM. My cakes often would dome up in the middle in an annoying way. It didn’t affect the taste, but if you wanted nice flat cakes to ice and decorate, then away with the dome!

My strips are the EvenBake Strips, but these Wilton ones also caught my eye. They would be handy because they can be combined to use on larger pans. I also looked at these silicone strips. They would be handy to store and use, but definitely limit you to certain size pans.
I’m just thrilled with this new discovery and addition to my kitchen. I’ve used them for a few cakes so far and they work!!!! Nice flat cakes.

I’ve always leaned in favor of a cake mix to make a downright yummy cake. I have some favorite cake recipes, but honestly, it’s really hard to beat a mix as your starting point. Brownies too! That’s my opinion. 🙂
Here’s the recipe ~
Ingredients
- 1 Gluten Free Yellow Cake Mix {I had Betty Crocker}
- 1/2 cup {or 1 small pkg} vanilla instant pudding mix
- 1 cup sour cream or 3/4 cup sour milk&1/3 cup butter
- 1/2 cup coconut oil, in liquid form
- 1/2 cup water
- 4 eggs
- 1 T. vanilla
- 1 cup chocolate chips
- Vanilla Butter Glaze:
- 1 1/2 T. butter, melted
- 1 1/8 cups powdered sugar
- 1 1/2 T. water
- 3/4 tsp. vanilla
Instructions
*As always, doublecheck that your ingredients are gluten free
Combine cake mix and pudding mix. Stir in sour cream, oil, water, eggs and vanilla.
Mix well to combine.
Add chocolate chips.
Choose your pan or pans. 9x13 baking dish, 12-cup Bundt pan, or two 8/9 inch round pans. Greas pan. Coat with sugar.
Pour batter into prepared pan.
Bake at 350 for time indicated on cake mix box for the pan you are using or until cake tester inserted in the center comes out clean.
If using round pans or bundt pan, cool in pan for 10 minutes. Invert onto cooling rack and finish cooling.
In the meantime, prepare glaze.
Melt butter. Whisk in powdered sugar. Add water and vanilla and combine. Let stand a few minutes to thicken. Pour over the top of cake. If you like a lot of glaze, you can double the recipe.
For round cakes, place one on cake plate and top with half the glaze. Place other cake on top and spread the rest of the glaze on it. Garnish with a few chocolate chips.
Find a tall glass of milk and enjoy a slice of cake!
If you don't need gluten free, simply use a regular yellow cake mix!

Looks delish, will have to try it! I’ve never used the strips but they do look handy. I have a cake separator that handily lops off the top if need be. Totally agree about brownie mix…I have tried several recipes, including ones that claim to be superior to box mix. They lie. There is nothing like a box mix brownie.
The strips are GRAND! Changed my life forever. I have one of the leveler/slicers too, but I never felt like I handled it very well. Ha! Another recent tip, I’ve tried and used is to freeze your layers before you ice them. Works great! They don’t crumb.
Brownie mix ROCKS! Want to come over? I have a mix in my cupboard and coffee handily accessible as well. 🙂
