Β Another recipe to add in to my recipe log and a favorite around here! It’s a great way to use up bananas that nobody picked up and ate and are getting overripe. This seems to occur now and again, unless you have someone at your house that likes really, really ripe bananas.
{I remember someone we are acquainted with saying they liked really, really ripe bananas, {like skins turning black, bananas} but I can’t remember for sure, who. I have a couple guesses, but don’t quite recollect. And why does that matter or apply here? It doesn’t. Just an interesting tidbit and thought that popped into my crazy, scattered brain. I also think I’ve heard of people that like bananas ONLY when they’re on the greenish side.}

Back to over ripe bananas ~We don’t have anyone like that at our house and I, myself, am not even very crazy about bananas, unless they are mixed in with other fruit.
My Grandma used to eat a banana every morning with her cereal. She always had bananas around I think. It is a memory of her that I have and is so much a part of who she was.
But here’s the Banana Bar Recipe if you are so inclined to try it and if you have over ripe bananas lurking around in some corner of your kitchen or waiting patiently in your freezer to be turned into bars or bread!

Ingredients
- 1/2 cup butter, softened
- 2 cups sugar
- 3 eggs
- 1 1/2 cups bananas {approx 3 bananas}, mashed
- 1 tsp. vanilla
- 2 cups flour
- 1 tsp baking soda
- 1/8 tsp salt
- Cream Cheese Frosting:
- 1/2 cup butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 2 tsp. vanilla
Instructions
Cream butter and sugar.
Mix in eggs, bananas, and vanilla.
Add dry ingredients and stir till combined.
Pour into a large greased jellyroll pan. {15x10}
Bake at 350 degrees for 20 to 25 minutes.
Cool.
While bars are cooling~
Cream together butter and cream cheese.
Gradually add in powdered sugar and vanilla.
Beat well and frost cooled bars.
Refrigerate.
Enjoy with a large glass of milk! {Unless you don't care for milk} {You could enjoy with coffee or some other beverage of choice.} {Or eat them alone!}
