I made sweet potato casserole and took to my aunt’s for Thanksgiving dinner this year. I’m the only one in our little family that likes sweet potato casserole. Or sweet potatoes in general. I don’t eat them a lot, but I do like sweet potato casserole. It goes well with Thanksgiving dinner and with Christmas dinners too! Here’s the amounts and ingredients I tweaked and used for my casserole. It was yummy!
Do you fix sweet potatoes? Does your family like them?
Ingredients
- 6 cups sweet potatoes, cooked and mashed
- 1 1/2 cups sugar
- 3 eggs
- 1 1/2 sticks butter
- 1 tsp. vanilla
- Combine ingredients and mix well. Place potatoes in a greased 9x13 baking dish.
- Topping
- 1/3 cup butter
- 1/3 cup flour
- 1 cup brown sugar
- 1 cup chopped pecans
- Mix flour and sugar. Cut in butter until crumbly. Add pecans. Spread on top of potatoes.
- Bake at 350 degrees for 25-30 minutes.
- Serve and enjoy!
Notes
I chop up 6 heaping cups of sweet potatoes and add a few more and then cook. I really don't measure the cooked amount.

Absolutely love sweet potato casserole. I’m the only one in my family that likes it too, I have a few that will eat a token amount but not enough to make a big pan. I typically get lazy and just buy a can of sweet potatoes – they were on sale for $2.00 today at the store. Not as healthy as cooking your own but I figure after you add nearly a whole bag of brown sugar it’s not going to be healthy anyways 😉
