This is a yummy and simple potato recipe. It takes a little prep and a little planning ahead so it has time to bake. I’ve also microwaved the potatoes, but I like to just stick them in the oven to bake away!
This is one of those to-taste recipes. There aren’t amounts for the seasonings. Just sprinkle on what looks good or smells right! 🙂
Ingredients
- 4 Potatoes, chopped and diced
- Melted Butter
- Salt
- Pepper
- Garlic Salt
- Parmesan Cheese
Instructions
Spread chopped potatoes into an 8x8 baking dish.
Drizzle with melted butter.
Sprinkle with seasonings and parmesan cheese.
Bake at 350 for approximately an hour.
Remove from oven and gobble up! {wait until they're cool enough not to burn your mouth.}
Notes
You can use seasoned salt instead of garlic salt and can add parsley.
For a 9x13 just chop more potatoes~whatever amount you need to feed your people!

I get in potato ruts and am always looking for new ways to cook them (because they are so cheap!). Will try this very soon…but definitely with more potatoes because even my 6 year old will eat 2 potatoes!
This is a recipe that you just add and adjust to what looks like a good amount! 🙂 The ingredients just give you a base.
I have a Hamburger-Potato Casserole that calls for 3 cups of thinly sliced potatoes and I usually use more potatoes than that.
Yum! That sounds a lot like the recipe for Parmesan potatoes I have only easier cause there is no measuring!
I like the small size of the diced up potatoes too.
