We’ve been having lots of potatoes out of the garden and I’ve made a couple recipes of this mashed potato casserole and put in the freezer.
So, this is a good time to post this recipe to my growing record of my favorites here on my blog! This recipe is a good way to use up some of the potatoes out of our garden and I always love having food in the freezer. My problem then is wanting to hoard my frozen meals for “sometime when I really need it.” I don’t know why I do that!! I am better about it than I used to be.
“It’s there. Use it. That’s what it’s for.” And no matter what is or isn’t available in the freezer, I’m always going to have times when I wish I had something to pull out and I’m always going to have times when I’m so glad that there’s frozen food I can quickly pull out. No matter how nice I would it be, I’m not going to wake up some morning to find that everything is exactly falling in place with frozen meals within arm’s length at every exact right time. “Not happenin’!”
So, fix it, use it and rejoice that I can! 🙂

Here we go….
Ingredients
- 5 pounds of red potatoes (or whatever kind you prefer)
- 16 ounces of sour cream
- 8 ounces of cream cheese
- 2 tsp. of onion salt
- 1 tsp. of sea salt
- 1/4 tsp. of pepper
- 4 T. of butter
- Grated Cheese to taste or optional
Instructions
Peel and cook potatoes until tender.
Drain. If you have a Kitchen-Aid mixer, transfer them to mixer bowl. Otherwise transfer to a large mixing bowl.
Whip potatoes.
Add the rest of the ingredients, whipping and mixing well.
Place into a greased 9x13 baking dish.
If desired, top with additional grated cheese.
Bake at 350 degrees for 30 minutes.
You can store this in the refrigerator for a week and it freezes well.
A different twist on the cheese is to omit all grated cheese and top with cheese slices towards the end of the baking time.

LOVE this casserole! Wish I had one in my freezer right now! Maybe I’ll get the stuff for it and Mom can help the girls make it on Wednesday. She’s been helping them make food every wednesday after school is done and I just love the results – good food to eat and my girls are learning how to cook!
This is such a great casserole idea! It sounds easy and I think I’m going to try it!

How many does this feed?
I would say approximately twelve. I always struggle with how many I think a dish will feed. It so depends on what else you’re having, if you’re feeding a mix of adults and children and the likes and dislikes of your crowd! 🙂
