Do you like miniature food?
Yeah, that sounds kind of funny, really!!
But, I think bite size appetizers, and cheese cubes and mini muffins and things along this order are fun to eat! Plus, a lot of times they look really pretty or you can display them in an appetizing way.
This muffin recipe is for yummy, tender mini muffins with a light lemon flavor. The lemon isn’t real, real strong. I think if you want a more lemony flavor, you could add more lemon extract, but I’ve never tried it. It would be good, but I also like these the way they are!
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 cup sour cream
- 1/2 cup melted butter or oil
- 2 eggs
- 1/2 tsp. vanilla
- 1/2 tsp lemon extract
- 2 T. poppy seed
- 2 T. milk
Instructions
Combine dry ingredients.
Add in the rest of the ingredients, mixing till combined.
Line mini muffin pan with paper liners or spray well with cooking spray.
Fill muffin cups. I use a cookie scoop for this.
Bake at 400 degrees for 15 minutes.

oh, these look delicious! my favorite muffin is blueberry, but these could easily take their place.

Mmmm, I love blueberry too! I bet these would be good with some blueberries thrown in because I think lemon and blueberry go well together.
