I typed up a quick post about the March flexi-of-the-month last night and scheduled it to post early this morning. I wanted to share a recipe today, so I’m sitting down to get it posted.
Herbed Oatmeal Pan Bread. The name alone makes it sound yummy. A friend and neighbor shared this recipe with me a few years ago. I pull it out every so often and stir up a batch. I keep thinking I’m going to try it sometime without the herbs on top, but I like it so well that way, that I never do it. It would be yummy though, with butter and honey or butter and applebutter or butter and strawberry jam or…….
Ingredients
- Mix Together:
- 1 1/2 cups boiling water
- 1 cup old-fashioned oats
- Cool.
- Dissolve:
- 2 pkgs yeast in
- 1/2 cup warm water
- Add to yeast mixture:
- 1/4 cup sugar
- 3 T. butter, softened
- 2 tsp. salt
- 1 egg
- 2 cups flour
- Add cooled oatmeal mixture. Stir.
- Add 2-2 3/4 more cups of flour.
- Mix. Place in greased bowl, cover, and let raise till double.
- Press into greased 9x13 baking dish.
- Cut diagonal lines completely through dough in both directions. Cover and let raise until double.
- Meanwhile stir up topping.
- Topping
- 2 T. parmesan
- 1 tsp. basil
- 1/2 tsp oregano
- 1/2 tsp. garlic powder
- Combine and set aside.
- After bread has risen, redefine your lines. Brush with 2 T. melted butter.
- Bake at 375 for 15 minutes.
- Brush with 2 more T. melted butter and sprinkle herb topping on top.
- Bake 5 more minutes.
- Cover with foil and bake 5 more minutes.
- Serve and enjoy!
Notes
I make my lines in squares instead of diagonals. The diagonals are pretty, but make it more confusing to serve. {It doesn't take much to confuse me.} I also don't necessarily worry about the covering it for 5 minutes at the end. If your oven browns things easily, you might want to or just keep an eye on it. I'm notorious for cutting out steps and doing something as simply as I can.

That looks really yummy! I’ve never made {let alone heard of} pan bread–I’ll have to give it a try π
It is yummy. It sounds like several steps, but it is easy. The biggest thing is remembering to allow time for the oatmeal to cool.
I don’t know if I’d ever heard of the term pan bread before either. I assume it is because you put it in a baking dish vs a bread pan. Really, it is sort of like dinner rolls without all the rolling. You could do the same thing with other doughs.
That does look delicious! I need to get more oats but I am going to try this recipe! Glad I’m not the only one who is easily confused! Diamond shaped bar cookies are always so pretty but it seems like you waste some on each end?
One good thing about diamond shaped cookies would be the possibility of small pieces and “scraps” to eat when you cut them?! I’ve never done diamond shaped. I guess I’m just an uneven-squares kind of gal. π
That looks delicious! Unfortunately, I never have the time nor patients for yeast breads. =)
Yeast breads do take some time. I like to mix up yeast dough and let it raise in the refrigerator overnight. Let it set out for a half hour or so and shape it and let it raise again. It always feels like you’re way ahead when you do it this way!

This looks delish! And I love how easy it is to print out and the printing is easy to read and all the recipe is there. Obviously, I ‘ve had other recipes I wanted to print out but wasn’t as easy as this and some of it was missing entirely. Anyway, I hope I try this soon. It looks so good.
