This cake has long been a favorite recipe of mine. I’ve made it for a lot of years and don’t even remember when I first made it. I find myself pulling out the recipe every autumn and at other times of the year too! When I have extra apples, I chop up enough for this recipe and stick them in the freezer to pull out at a later date.
This cake can serve as a dessert or it can make a great coffeecake for breakfast.
I’ve served it at brunches and at teaparties!
I whipped one up last week and served to friends one morning, along with hot drinks.
Ingredients
- 1 1/4 cups flour
- 1 cup whole wheat flour
- 1 cup sugar
- 3/4 cup brown sugar
- 1 T. cinnamon
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp baking soda
- 3/4 cup oil
- 1 tsp. vanilla
- 3 eggs
- 2 cups chopped apples
- Glaze:
- 1/2 cup powdered sugar
- 1/4 tsp vanilla
- 3 T. milk
Instructions
Mix dry ingredients together.
Add oil, vanilla, and eggs.
Stir till well combined.
Add apples.
Pour into a greased 9x13 baking dish or a 12-cup bundt pan.
Bake at 350 degrees for 30-50 minutes, depending on pan you use. Bake until cake tester inserted in middle comes out clean!
Cool.
Combine glaze ingredients and drizzle over cake. Glaze is runny and soaks into cake, making it very yummy!
