I have a yummy potato recipe to share today. We all love these and they disappear quickly. Which is a good thing, because they’re best fresh. I love having leftovers to heat up for a nice, quick lunch, but some things just aren’t as good leftover. Some foods almost get better as leftovers, I think. But not these potatoes. The cracker crumb crust gets soggy.
My mother-in-law fixed these and my husband grew up eating them and promptly passed his love of them on to the rest of us. I’ve adapted the recipe somewhat. It called for the potatoes to be sliced in thirds, but I much prefer thinner slices and they bake faster.
These potatoes take a little prep time with the dipping in butter and cracker crumbs, but they are a very yummy treat!
Ingredients
- 4 potatoes
- 6 T. butter, melted
- 1 cup cracker crumbs
Instructions
Scrub or peel potatoes. Slice into thin slices. {I have a slicer I like to use.}
Dip in melted butter.
Roll in cracker crumbs.
Place in greased 9x13 baking dish.
Sprinkle with salt.
Bake at 350 for 45 minutes to 1 hour or until they poke tender with a fork.
Serve and eat them all up!

Our family of four eats these right up, but my man and our daughter love potatoes! 🙂 We all like these.
I like to keep cracker crumbs in the freezer. Then they’re ready to go. Anytime I have crackers that we aren’t using, I will smash them into crumbs with my handy-dandy food chopper {a gift from my mother-in-law several years ago and I love it!} and stick them in the freezer. Somehow, when I go to make meatloaf or this potato recipe or another recipe that calls for cracker crumbs, it is a nice boost if I can eliminate the step of preparing cracker crumbs and use my stock of crumbs in the freezer. It at least feels like the prep time is faster! One of my quirks. One of many.
We fixed these this week and may have to fix them again soon. My daughter came into the kitchen just as I started them and was super-excited to see what I was making. She did all the dipping for me, which totally rocked. I was working on a couple of recipes for the freezer and was able to finish one while she did the potatoes. I well remember my mother talking about getting used to two daughters who helped a lot in the kitchen and did a lot of the cooking. Then they both got married the same year and moved away and suddenly she had to cook again! I’m understanding how much help kiddos in the kitchen can be!

This sounds good. Don’t think I’ve ever had it. By the way, I still miss those 2 girls helping in my kitchen!! Was so fun to all 3 get busy. We could get so much fixed in a little bit of time. Good memories. I’m going to try this recipe. I think your Dad would like it.

It is amazing how much you can get done with two or three cooks. When there’s more than one person, it seems like when you get done the kitchen is cleaned up, compared to by yourself- you get the food prepared only to turn around to a mess to clean up!

I don’t always remember to take photos like I’d like to! Especially when I’m pulling food out of the oven and putting lunch on the table. 🙂
They don’t look a lot different when they’re baked. Probably a little browner.
I’m printing this one too – I think the man in this house will love them. not sure about the girls, they can be so snoopy. But I don’t try to cater to them all the time – if they don’t like the food that’s fixed they can go hungry or fix their own meal 😀
