We’ve had soup several times in the last month. Cold weather means soup. I’m pretty prone to think that a simmering pot of soup, on a cold winter day, is very hard to beat.
I made Cheddar Chowder last week and snapped a few photos as I prepared it for lunch.
We eat cheddar chowder with hamburger in it. We’re funny like that. I know most people think ham when they think cheddar chowder. I never do. Too be honest, I’m always going, “Ham?” “Oh yeah. That’s right. Most people do ham in cheddar chowder.”
I usually have hamburger in our freezer and that’s what we eat a lot. My man likes chicken. My man likes pork. And he likes some fish. But beef is definitely his favorite.
I appreciate my freezer stocked with beef. It is one less thing put on my grocery list and watch for sales and think about. My main effort is remembering to get my hamburger out of the freezer to thaw. I get sidetracked very easily and when I think for the fifth time that I need to get meat out of the freezer to thaw, I stop what I’m doing and go to the freezer, right then, because you know, if you don’t do it WHEN you’re thinking about it, the thought will soon wing itself away. Far away.
Ok, now that you’re updated on my thought processes and sidetrackedness and just-in-general lame brain, here’s a recipe!
Ingredients
- 2 cups water
- 2 cups cubed potatoes
- 1/2 cup chopped carrots
- 1/2 cup diced celery, optional
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 pound hamburger
- minced onion
- 2 cups grated cheese
- WHITE SAUCE:
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
Instructions
Cook together first six ingredients until vegetables are tender. (I don't use the celery a lot of the time.) Do not drain.
While veggies are cooking, brown hamburger and minced onion. Drain if needed.
In a saucepan or microwave dish, melt butter and stir in flour. Combine well and add milk. Cook until thickened.
Stir white sauce, hamburger, and cheese into cooked vegetables.
Heat till cheese is melted.
Serve and enjoy a yummy soup dinner! Especially on a snowy day.

I often double this recipe. We all think it's pretty tasty and one recipe doesn't go very far.

Interestingly enough, we also like it with hamburger and some salsa! The amount of salsa depends how spicy it is, and your family’s preference on the “kick!” I really enjoy making soup! Thanks for the great reminder!
