We had overripe bananas lurking around our kitchen this week. So, I whipped out a trusty and easy recipe we’ve used for quite a while now. Good ole banana bread.
My daughter stirred it up one day after lunch, while I worked on the dirty dishes. It is truly easy-peasy! I don’t like banana bread, but the other three that live here, gobble it right down. I’d rather have the blueberry rolls that I made yesterday. My mother-in-law gave me sourdough starter again and so I made the rolls using sourdough.
Ingredients
- 1 yellow cake mix
- 3 medium bananas, mashed
- 1/8 tsp. soda
- Water according to cake mix, less 1/4 cup
- Oil and eggs according to cake mix
Instructions
Stir baking soda into cake mix. Add liquids and eggs.
Stir in bananas.
Pour into two greased loaf pans.
Bake at 350 degrees for 45 to 50 minutes, or until cake tester comes out clean.
Enjoy the yummy aroma and serve warm with butter!

This recipe is so easy and makes a moist bread.
Renae wanted to know why it was called banana bread instead of banana cake. Cause technically, I’d say this recipe is closer to cake than bread. I told her the only explanation I had was that it was made in a loaf pan instead of a cake pan.
We also used up bananas and made more frozen fruit cups. The ones I made recently have rapidly disappeared. I really like keeping the freezer stocked with them.
