Here’s a super simple, super yummy, bright and sunny recipe for this Monday morning!
It’s a go-to breakfast dish of mine. We eat it for supper as well.
I got this recipe from my aunt years ago. I’ve adapted it a bit and we all love it.
I’ve used sausage instead of bacon. We do like bacon best!
You could get pretty creative with this recipe. Add seasoning or spice to the eggs. You could add ranch to your sour cream or use a different creamy spread. Whatever sounds yummy to you!
The wind WHOOPED all day here yesterday and is still dancing outside my windows this morning.
It’s a beautiful morning, anyway. The sun rising behind a few clouds greeted me when I peeked out and it was gorgeous.
What to-dos do you have in your week?
I have food to fix and bookwork calling me.
We most likely will have combines and tractors and grain carts rolling this week. Which totally means excitement, chaotic, busy, beauty, pressure, bustle, and long days to gather in the grain.

Ingredients
- 1 dozen eggs, scrambled
- 1 pound bacon, fried and crumbled
- 16 oz sour cream
- 1 cup shredded cojack cheese
Instructions
Place eggs in greased 9x13 baking dish.
Spread sour cream on top.
Sprinkle with bacon.
Aaaaaaaaaaaand.............
Top with cheese.
Bake at 350 for 20 minutes.
Delicious!
This can be microwaved to heat it instead of baking.
Can be prepared ahead and you can freeze it!
