Here’s another rhubarb recipe from my husband’s side of the family. This pie disappears at our house, almost as quickly as fresh strawberry pie does. Almost. It is super easy. Hardest part is having a pie crust ready to use and chopping up your rhubarb! When Mom brought us some rhubarb a couple of weeks ago, I was happy to remember that I had pie crusts in the freezer, waiting to be used. Pie making goes so fast when you can pull a crust out of the freezer!
Ingredients
- 3 cups raw rhubarb, chopped and diced
- 1-(3 oz) pkg strawberry jello
- 1/2 cup flour
- 1 cup sugar
- 1/2 tsp. cinnamon
- 1/4 cup butter, melted
- 1 unbaked pie shell
Instructions
Place chopped rhubarb in unbaked pie shell.
Sprinkle dry jello over rhubarb.
Combine flour, sugar, and cinnamon. Add melted butter and mix till crumbly.
Sprinkle over rhubarb and jello.
Bake at 350 for 50 minutes or till rhubarb is tender.
Enjoy warm or cold! With a big scoop of vanilla ice cream or without! Homemade vanilla ice cream is pretty, pretty yummy with this.
