“Mom, why have we never made this kind of pie before?!”
This was my daughter’s enthusiastic question when she tried her first bite.
Well, dearie…..basically, because we don’t have red raspberry plants and raspberries are pricey and I’ve been the main raspberry lover in our household until the last while, when my kiddos have realized they like them too, and because I just never thought too much about making a pie, since we usually just gobble up the fresh raspberries quite quickly when we do have them. {deep breath} Oh, and because daddy’s not that crazy about red raspberries. Like, not at all. But, hey that leaves more pie for us.Thanks to a rockin’ raspberry deal at Dillons, we brought several packages home with us.
And then the brilliant idea to make a pie was born.
So we did.
This recipe is basically my Strawberry Pie turned Raspberry, but I will post it as its own printable.
Ingredients
- 1 cup sugar
- 3 T. cornstarch
- pinch of salt
- 1 cup boiling water
- 2 T. butter
- 3 T. dry raspberry jello
- 2-3 cups red raspberries
- 1 baked pie shell
Instructions
In a saucepan, combine sugar and cornstarch and salt. Pour in boiling water. Bring mixture to a boil over medium-high heat, stirring constantly. Boil for 2 minutes.
Remove from stove and add in the butter and jello. Stir until butter is melted and jello is dissolved.
Cool slightly.
Fold in raspberries and transfer to baked pie shell. Cover with saran wrap, smoothing saran wrap onto the top of the pie. Refrigerate several hours.
Eat it all yourself! {or share if you have to.}
Notes
You can go with more raspberries or less raspberries depending on preference, availability, price etc. ect. 🙂 Less raspberries will just give you a pie that's not quite as full and the filling will be more of the jello mixture and less fruity. It's all good!

It looks delicious! My husband loathes raspberries so I never use them. Looks like a pie I would like, though.
It must be a man thing. Loathe would be a good description for my husband’s opinion of raspberries too.

Around here zucchini pie is a fav. Any pie is just fine with my hubby!

Those raspberries look really nice. We have picked a few from the new plants in the garden and I always think of you when we eat them. Wish you and the kiddos could have some of them, although it’s been just a handful at a time and not enough for a pie yet. I would gladly help you eat that pie if I could. 🙂
