Gluten Free Almond Cake With Strawberries

One day as I was browsing recipes, I found and printed this one out and added it to my stack of “to try“.

It sounded really good.

It sounded easy.

It looked fun to make!

As it turned out, it WAS!!

The original recipe is right here at Your Home Based Mom. The recipe is officially called Gluten Free Flourless Almond Honey Cake with Berries.

I only used strawberries to top mine, but you can use a mix of berries. Or you could do only blueberries or only raspberries or only blackberries. The texture and flavor of the cake would be VeRy TaSTy with any type of berries.

I was invited to a small baby shower for a friend and offered to help out with food. The hostess asked if I would want to bring something gluten-free. I remembered that I had this recipe and was all “AHA! Perfect time to give it a go!”

I would compare it just a bit to an angel food cake. Just a bit. In a way, I don’t like to make comparisons because sometimes if I have something in my head and then this other thing is different, I’m all “Oh, that’s not what I was expecting.” 🙂

So, I say, just a bit for lack of any other comparison or description. Other than, I thought it was very delicious! The lemon gives it a lovely flavor. And the strawberries add a delicious burst of flavor.

It was fun to top the cake with berries and drizzle it with the syrup. It made a very pretty creation.

October is ending and AS ALWAYS I’m eyeing my calendar page and wondering where the month went! We had a restful weekend at home and it was WONDERFUL!! I actually didn’t feel the best and didn’t do some things I was hoping to. That was ok, though. Things DO always wait and it felt good to rest and read.
