English Muffin Pizzas! Yummy! I love these. My husband is not as enthusiastic about them as I am, but hey. I like to have them in the freezer for a quick lunch for me when he’s in the tractor or gone for the day. And he will eat them on occasion. Our favorite meals differ quite a lot. 🙂 Throw in a couple of picky kids and cooking can become an interesting challenge. Some days I don’t mind, some days I do mind. Life is full of so many opportunities to practice being nice and/or unselfish. At least my life is. heehee.
Here is a very basic recipe for these cute, little pizza pies.
Ingredients
- 12 English Muffins, split apart
- 1 jar (26 oz) of marinara sauce
- 2 pounds of sausage, browned
- 1 pkg (7oz) pepperoni
- mozzarella cheese-I didn’t measure the cheese, just sprinkled it on. I’m guessing that a 2 cup bag would be enough.
Instructions
Lay muffins out on a baking sheet. One with sides is handy. I like my sheet cake pans. Spoon marinara sauce onto each muffin. Top each with sausage and pepperoni. Sprinkle cheese on top and bake at 350 degrees 10-15 minutes till heated through or till cheese is melted or browned to your liking. Serve and savor!
Notes
I didn’t use all the marinara sauce or pepperoni. The sausage usually comes out about right for me for 24 pizzas.
I’ve assembled these and frozen them before they were baked and then popped one into the microwave for a quick lunch whenever needed. Or pull out several and bake them. You could also freeze them after you’ve baked them and pull them out and reheat.
I also think whole-wheat English muffins make them very yummy!
