I married a man that enjoys rhubarb desserts now and then. I don’t remember having rhubarb when I was a kid. My grandma did make Rhubarb Jello like my mother-in-law makes. I don’t remember her fixing it when I was young, but I probably just heard “rhubarb” and didn’t even try it. I was picky. There are so many foods that I like now that I wouldn’t have even tried as a kid. I still don’t love any and all foods and I tend to liked baked things over veggies. 🙂 I have a couple of friends who honestly like almost any kind of food. That would be nice in some ways and I will say it is more fun to cook for someone with this sort of palate. Namely, because you feel like a good cook no matter what!
We had this crisp at my sister-in-law’s and she shared the recipe with me. She has a pretty good stand of rhubarb. I’ve tried a couple of times and have yet to get a crop of rhubarb established. Forgetfulness and neglect and a black thumb, might or might not play into this.
Do you fix rhubarb?
Here’s the recipe for a yummy crisp. It’s especially delicious with creamy, cold homemade ice cream!
And over here is a recipe for Rhubarb Surprise Pie.
Ingredients
- 2 1/4 cups sugar
- 1/3 cup flour
- 5 eggs
- 6 cups raw rhubarb, diced
- Combine these ingredients and spread in a greased 9x13 baking dish.
- Crumb Topping:
- 2/3 cup flour
- 2 cups oatmeal
- 1 cup brown sugar
- 1 tsp. salt
- 2/3 cup butter
- Mix first four ingredients. Cut in butter and mix until crumbly.
- Sprinkle crumbs over rhubarb mixture.
- Bake at 375 degrees for 30 minutes.
- Serve to your rhubarb lovers!
I’ve never been a rhubarb fan but there are some strawberry/rhubarb recipes I love. And I have a new candle that is Strawberry/Rhubarb and I love the smell of it!
I might like rhubarb better now than I did as a kid – somehow those things do change with age!
